The single most defining thing about pinot noir is the softness on the palate. The flavours are subtle and various from game and spice to strawberries but in the end if there is any toughness on the palate or any obvious acid on the finish it is a failure as pinot. This one is medium weight for a red wine and a bit on the big side for pinot but the mouthfeel is all pinot with a lovley soft smooth run across the palate enveloping the punch of flavour. The flavours are classic pinot with meat juice and mushroom. (sounds like a good sauce). Makes you smile and look for more.

Have it on its own or with anything from a smoked salmon stirfry to a piece of rare roast lamb with shitake mushrooms of course!
