Young Semillon is famous for its lack of obvious fruit flavour, especially from the Hunter Valley, where they often fail to allow it to ripen properly. 

This Barossa wine has been cropped lightly and ripened fully, then barrel fermented with natural yeasts after being grown with no pesticides or chemical fertilisers.  Typically it has quite subtle lemony fruit flavours but the "mouthfeel" is soft and generous and it lingers on the palate even though it is quite dry.

It's all about texture.
